Sara Long-Anderson was my professor for several of my dietetics classes at Southern Illinois University. She is an excellent instructor, having combined her vast professional experience for use in the classroom, and the ability to share that experience with students and professionals alike across the spectrum of experience in a way that is both accurate and easy to understand.
