    Great choices for when you don't have or don't want to use a cake mix

    Unlike some people, I don't have a prejudice against "doctoring up" cake mixes--these can really work well (see Ann Byrn's "Cake Mix Doctor" series). That said, I do love baking from scratch, and this book is all about easy, one-bowl cake recipes. I haven't yet tried out any of the recipes, so I really can't give this book 5 stars. But as an experienced baker, I think they should work well. The first recipe I'll try is for mincemeat cake; the only other recipe I have involves several time-consuming steps (and bowls!). I'm really looking forward to trying these recipes. The recipes are laid out well and feature many photos, tips, and other helpful information. The design isn't very "pretty," but that is a minor point--and the spiral binding makes the pages lie flat, which will be helpful when it comes time to bake. Overall, the book is "user friendly."
