I just made dinner using a great baked chicken recipe from this book. If that sounds boring I'll only tell you it includes a quick and ingenious stuffing recipe that will make you look at baked chicken with different eyes. Last night I turned to it also and made a satisfying mixed pepper, caper and red snapper recipe. I've used this book so often that the spine has cracked. I've had it for years and was so happy with the chicken tonight I thought it was really time to look up some more books from this great chef. I would say this is for the cook who likes to cook, try new ideas, and isn't afraid to see for example why it's worthwile to peel asparagus spears and cook them briefly with chopped shallots, mushrooms, cilantro and a bit of butter. If you think that's too much--this isn't the book for you. I will say I haven't been thrilled with EVERY recipe in this book, (who ever is?) but I have liked a lot of them, have been really surprised by some, and those I did like I thought were GREAT. If you want a calorie conscious book with an appreciation for food and flavor, I wouldn't let this book get away.
