Easy Cheeseburger Pizza

Kitchen Tip
Prebaking the crust prevents it from becoming soggy when you add the sauce and toppings. The dough can also be baked on a pizza stone that has been sprinkled with cornmeal. The stone retains heat, promoting even browning of the crust's bottom.


Kids Can Help
Let children press the dough into the pan, spread the sauce and sprinkle the onion and cheese.

Prep Time: 15 minutes (Ready in 35 minutes) Yield: 4 servings

1 (10-oz.) can refrigerated pizza crust
1/2 lb. extra-lean ground beef
1 cup spaghetti sauce
1/4 cup chopped red onion, if desired
4 oz. (1 cup) shredded Cheddar cheese
1/4 cup dill pickle slices

1. Heat oven to 425°F. Grease 12-inch pizza pan. Unroll dough; place in greased pan. Starting at center, press out dough with hands, forming 1/2-inch rim. Bake at 425°F. for 7 to 9 minutes or until light golden brown.

2. Meanwhile, brown ground beef in medium skillet until thoroughly cooked, stirring frequently. Drain.

3. Remove pan from oven. Spread spaghetti sauce evenly over partially baked crust. Top with cooked ground beef, onion and cheese.

4. Return to oven; bake an additional 12 to 18 minutes or until bubbly and edges are golden brown. Top pizza with pickle slices.

Creamy Skillet Lasagna

Helpers can assemble a colorful side dish. Give them a serving platter and a variety of washed, trimmed vegetables.

Prep Time: 50 minutes. Yield: 6 (1 1/2-cup) servings

1 lb. lean ground beef
1/2 cup chopped onion
2 garlic cloves, minced
6 oz. (3 cups) uncooked mini lasagna noodles (mafalda)
1 (26- to 28-oz.) jar tomato and basil spaghetti sauce
1 1/2 cups water
1 (12-oz.) container low-fat cottage cheese
1 (8-oz.) pkg. 1/3-less-fat cream cheese (Neufchâtel), softened
1/3 cup grated Parmesan cheese
1/4 cup sliced green onions
1 tablespoon dried parsley flakes
4 oz. (1 cup) shredded Italian cheese blend

1. Brown ground beef in 12-inch nonstick skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain. Reduce heat to medium. Add onion and garlic; cook 5 to 8 minutes or until onion is tender, stirring occasionally.

2. Add uncooked noodles, spaghetti sauce and water; mix well. Bring to a boil. Reduce heat to medium-low; cover and cook 15 to 17 minutes or until noodles are of desired doneness and liquid is absorbed.

3. Meanwhile, in large bowl, combine cottage cheese, cream cheese, Parmesan cheese, green onions and parsley flakes; mix well.

4. Spoon cottage cheese mixture over cooked beef and noodle mixture. Sprinkle with Italian cheese blend. Cover; cook 5 to 7 minutes or until cheese is melted and mixture is thoroughly heated. Remove from heat. Uncover; let stand 5 minutes before serving.

Prep Time: 10 minutes

(Ready in 55 minutes) Yield: 6 servings
1 lb. lean ground beef
1 1/2 cups frozen whole kernel corn
1 (19-oz.) or 2 (10-oz.) cans enchilada sauce
1 (4.5-oz.) can chopped green chiles
1 (6-oz.) pkg. corn tortillas, cut into 1/2-inch strips
2 oz. (1/2 cup) finely shredded Cheddar cheese

1. Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Brown ground beef in large nonstick skillet over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain. Add corn, enchilada sauce and green chiles; mix well.

2. Spoon 1/4 of beef mixture into sprayed baking dish. Top with 1/3 of tortilla strips. Repeat layers two times, ending with beef mixture. Cover with foil.

3. Bake at 375°F. for 40 minutes. Uncover; sprinkle with cheese. Bake an additional 5 minutes or until casserole is bubbly and cheese is melted.

    I love to go to the library and look through the cookbooks. One day I hope to be a food blogger as a hobby. My special area would be for families - you know - good for kids, money saving, quick meals, supermarket short cuts, ext. This book was totally that is a nutshell. I expected it to be all about Pillsbury items, at least one in each recipe and that all the other additional items in a recipe would be store short-cuts as well. (I.E. Boxed, Canned, Frozen, Simple Fresh Stuff). If you're looking for gourmet, skip it - this is a books for moms on the go.




    Along with some fun recipes this book has tons of tips and quick fix lunch options. The desserts are a mix of tasty, and ones that are shaped and designed just for small kids. If you're a mother with young kids and/or a mother on the god you need this book. Get a hard copy because it will constantly be in your kitchen - dog-eared, stained, and well used - and hardcover lasts longer.




    It also has links to finding other recipes online that you can print, hole punch, and add to that binder of quick fixes you hide near the jars of cookies and sugar.




    I totally suggest this book, and it is on my list of books to purchase, and not just be a library read.
