Having tried so many diets & read too many health books, this one is a dream.I use the cookbook also. My friends and family love the tastes. My body feels so much better. I have arthritis, removing sugar really helped.
Quite simply the most detailed, objective, and provocative book on the science of food in our time. Think about it. Any study, even peer-reviewed, can be biased according to any number of motives or incentives. For example, you can find journal articles right now about the "health benefits" of saccharin! This author, Dee Mccaffrey, is a chemist. She has no connection to big business or the FDA. All statements and theories are cited for reference by someone who understands the physiology of food and explains it in layman's terms. This chemist releases the scientific evidence behind the most recent trends concerning the relationships between obesity (and other health ailments) with the modern day processing of nearly 70% of our foods. Exactly what the FDA does not want us to know. Think you know all the methods and procedures used to get foods on our grocery shelve? You have no idea. The fact is we are all lab rats ingesting harmful, molecularly altered chemicals and substances chosen by big businesses in cahoots with the FDA. They get richer while America gets fatter. Good book for a beginner who wants to make good food choices and get man-made additives and preservatives out of their diet. I was looking for a healthy change and read a review on this book in a magazine (can't remember which one) so I bought the book. Liked it enough to buy a second copy for my sister. Looking forward to a healthier diet.
