Potpourri, a fragrant mixture of dried flowers and spices, has been used since ancient times to perfume houses and other buildings. The revival of interest in herbs and other fragrant botanicals has brought a renewed enthusiasm in making potpourri. Devotees collect recipes in the same way that cooks collect culinary recipes, so most dried flower books contain a few recipes along with some general instructions.
