    A reviewer

    This book guided me through my culinary education. I found it to be very helpful and well written. I lost my copy in my house fire and miss it so much. I graduated culinary school in 1988 and stayed in the arts for well over 15 years. Cooking is my passion, and I used this book throughout my entire career.

    Professional Cooking

    This is a great addition to any cook from the dabbler to the pro chef's library. It is very informative and shows you lots of different recipes for the cook to use and to help either build the daily family meal or to use in a restaurant.
