I've made several meals from this book and have been really pleased. The vegetable soup with quinoa is a real favorite so far, as well as the Moroccan tomatoes, spinach and chickpeas. Very easy to make and even my omni husband likes them.
My husband, 12 year old daughter, and I just converted to a vegan lifestyle. Best decision we ever made. Quick-Fix Vegan is a fabulous cookbook for anyone just starting out or a veteran of the plant based diet lifestyle. Simple, hearty, and flavorful recipes. I am slowly cooking my way through the entire thing!
I like the fact that the author doesn't depend a lot on fake "meat" in her recipes. I include tofu in that category. (I am deathly allergic to all that stuff) I have enjoyed all of this author's books. I don't think you'll be disappointed.
While the recipes are VERY tasty, be prepared- they are NOT on the table in 30 minutes or less. Most of the recipes require longer cooking time than that.
