Turkey Sweet Potato Shepherd’s Pie
Serves 4

   • 2tablespoons EVOO (extra-virgin olive oil)
   • 2pounds ground turkey or chopped leftover turkey
   • Salt and pepper
   • 2teaspoons poultry seasoning
   • 2 1/2 pounds sweet potatoes, peeled and cubed
   • 1onion, peeled
   • 2carrots, peeled
   • 4celery stalks from the heart, chopped
   • 4tablespoons (½ stick) butter
   • 2tablespoons all-purpose flour
   • 2cups turkey or chicken stock
   • A few dashes of Worcestershire sauce
   • 1(10-ounce) box frozen peas
   • 1very ripe banana, sliced
   • A few dashes of hot sauce
   • 2cups shredded sharp yellow cheddar cheese

Preheat the oven to 425°F.

In a deep ovenproof skillet or a Dutch oven, heat the EVOO over high heat. Add the turkey and break it up with a wooden spoon; season with salt and pepper and the poultry seasoning. Place the sweet potatoes in a pot with water to cover. Cover the pot, bring to a boil, then salt the water and cook the potatoes for 15 minutes, or until tender.

Grate the onion and carrots directly into the skillet with the turkey. Add the celery, stir, and cook for 5 minutes. While the vegetables are cooking, heat 2 tablespoons of the butter in a small pot over medium heat. Add the flour to the melted butter and whisk for 1 minute, then whisk in the stock and season with salt, pepper, and Worcestershire. Cook for a few minutes, until thickened, then add to the turkey mixture. Stir in the peas into the turkey mixture and turn off the heat.

Drain the potatoes and return the hot pot to the heat. Add the remaining 2 tablespoons of butter and melt over medium heat. Add the banana and potatoes to the pot and season with salt, pepper, and hot sauce. Mash the potatoes and banana to combine, and adjust the seasoning.

Spoon the potatoes onto the meat, and cover the potatoes with the cheese. Bake uncovered for 5 minutes to melt the cheese.

    Quintessential Rachael

    If you watch Ray's show or have other cookbooks by the author, and you looked through Rachael Ray's Big Orange Book without glancing at the cover, you would immediately know it was hers. To begin with, it's loaded with her unique language--EVOO (extra virgin olive oil,) "sammies" (sandwiches,) and more.<BR/><BR/>The largest section of the book is comprised of Ray's famous 30 minute meals. This section is broken down to soups & sammies, pasta, chicken, beef, ham & pork and fish.<BR/><BR/>Ever since my husband got back from a business trip in California and told me about a delicious meal of fish tacos, I've been experimenting. So, when I saw "My-oh-mahi tacos," I had to try them. They were delicious! The best part was that the recipe has you first wrap the filling with a corn tortilla, then a flour one. I think the corn tortillas taste and texture are great, but I hate how they always break, spilling taco contents everywhere. With the flour tortilla wrapped around it, everyone plays nice and stays inside.<BR/><BR/>There is a vegetarian chapter. Now, I assume if you are a vegetarian, you would not buy this book for the one chapter. However, be warned if you make Winter Greens Pasta for a vegetarian eater--the recipe calls for ANCHOVIES! Anchovies are FISH--therefore, this is not strictly a vegetarian dish.<BR/><BR/>Other chapters include kosher, family recipes, entree burgers, starters and snacks, holiday menus and dishes that take more than 30 minutes to prepare.<BR/><BR/>I also made Broken Florentine Lasagna Bake, because I love swiss char and am always looking for new ways to prepare it.     Huge Rachael Ray fan! Didn't let me down with this one!

    Rachael always has the average person in mind when creating her recipes and products. She relates to everyone and makes things so easy whether it's a new recipe or a new product. I highly recommend this book and all of her other books as well.

    great cookbook

    I usually purchase and never really use my cookbooks. This one has wonderful recipes, is easy to use and I get hungry every time that I pick it up.

    Repetitious

    I found way too many "repeats" in this book from her other books . I was hoping for more "original" recipes in all categories .
    Waste of $$ if one already has a RR cookbook.

    Not what I expected...

    I was disappointed with Rachael Ray's "BOB." I did not feel that it was a very good reflection of the dishes that Rachael makes on her show. Many of the recipes are too involved for someone who just wants to throw a meal together in a short period of time.

    Rachel Rays Big Orange Book Of Fun

    Rachel Rays Big Orange Book is like Rachel herself, fun but not serious. I think that this a great book for the new cook or the cook looking for something quick and easy. Lot's of great recipes but I wish she would include a lot more pictures.
