Great Recipes for Teens and Grown-Ups, Too!

I love this cookbook. I wanted it mainly so my teen would get in the kitchen and make his own food once in a while using something he already knows how to make -- ramen -- but have found a lot of recipes for myself and the whole family. I'm vegan and was happy to see that there is an entire section devoted to vegetarian eats. The Sesame Crusted Tofu on Ginger Lime Noodles was fantabulous and the Spicy Basil Stir-Fry is a favorite around here now (the non-veg folks love it, too.) Really, though, lots of the recipes throughout the book are already vegan or vegetarian or can be easily adapted (just use Top Ramen Noodles Oriental flavor or other Korean brands that are vegan). I've made the Lettuce Wraps with both seitan and tofu (YUM!) and have subbed veg broth and tofu in the Vietnamese Noodle Soup and used a vegetarian version of "Oyster" Sauce and it was spectacular. As for my kid, hey, gotta love ramen recipes with ACTUAL VEGETABLES! He makes the Scallion Pancake and Asian Cabbage Slaw all the time. He loves snacking on the chocolate peanut haystacks, too. At first I was like, "I'm sorry, you're making ramen noodles with chocolate? No thanks." But they are seriously addictive. You can also adapt this recipe by letting the chocolate cool slightly after step 2 and then shaking it all in a bag full of some powdered sugar (sort of like ramen puppy chow).

Creative and tasty recipes easy to prepare for singles or families.

I always thought of ramen as a go-to food when I was in a hurry, but without much flavor or variety. This book really changed my thinking! It begins with interesting facts and history of ramen and has 10 easy ways to jazz up ramen that are very tasty! The recipes are easy to follow and so creative that I have received many compliments from friends and family, plus continued requests for recipes. My favorites are Spicy Peanut Noodle Wraps, Lentil Noodle Soup, Ramen-Crusted Cinnamon French Toast, and Black Bean and Green Chile-Stuffed Peppers. I like the way the author give insight, suggestions, or a little narrative with each recipe. A great addition to your kitchen!
