    The Best I Have Seen

    The most complete treatment I've seen in text form. It is definately not 'Restauant Management For Dummies' it is for serious students and managers. At 688 actual pages excluding glossary, it is comprehensive and a good value. I really liked it. It's also an up-to-date and easy read despite being detailed.
