1/4 pound unsalted butter, room temperature
1/2 pound Gorgonzola or other blue cheese
1 cup unbleached all-purpose flour
3/4 cup pine nuts, lightly toasted
Preheat oven to 350 degrees. Combine butter and cheese in food processor. Add flour, nuts, salt and blend briefly. Do not puree nuts. Form into two 1 1/2 inch cylinders. Wrap in foil or waxed paper and chill overnight. Slice dough 1/8 inch thick and place on lightly greased baking sheets. Bake until golden brown, about 12 minutes. Cool on wire racks.
