"Good-for-You" Fried Chicken
Total preparation time: 15 minutes
1 3/4 pounds boneless, skinless chicken breasts
1/2 teaspoon paprika
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup wheat germ
2 teaspoons olive oil
1. Rinse chicken and pat dry. With a mallet or meat tenderizer, lightly pound until each breast is 1/3 to 1/2 inch thick.
2. On a plate, thoroughly mix paprika, salt, pepper, and wheat germ. Dip each piece of chicken in the spice mixture to coat evenly, and set aside.
Heat the oil in a large nonstick pan over medium-high heat. Add the chicken breasts and sauté 2 to 3 minutes on each side, until lightly brown and juices run clear when pricked with a fork, or internal temperature is 170 degrees F. Remove from pan and serve immediately.
