Papas grew up in Athens, Greece a slim and popular young man. But during his first year in college, stress and depression drove him "to reach for junk food for comfort and chocolate for fulfillment;" in one year, he gained 110 pounds. Desperate to find a solution, he switched his major from economics to nutrition, lost the added weight, and began developing this delicious program, a "southern Greek diet...revised along the lines of modern science and nutrition." The diet is based on meals that emphasize vegetables, fruits, whole grains, and protein, and Papas dutifully includes recipes for dishes like turkey phyllo pot pie, Mediterranean chicken fricassée, and garlic aioli shrimp. If readers follow the "Slimmer" plan, which is organized into three 21-day cycles, Papas claims most dieters will drop 10% of their body weight in the first month, and 5% each month after. Built into the program are "Free Days" and "Happy Moments" (things like ice cream, wine, and coffee), elements that anyone used to strict diet regimens will surely appreciate. Even those unwilling to follow Papas's plan to the letter will find plenty of cogent advice and delicious dishes here.

"The New Mediterranean Diet is a well-researched, very well-written book that we have no reservations recommending. Papas' new version of the Mediterranean diet is not only a delicious way to eat, but also heart-healthy, fairly inexpensive and entirely sustainable. The more than 80 recipes included look delicious, creative and surprisingly healthy. And the clearly-outlined diet plan divided up into cycles makes the nine-week process of weight loss seem more attainable and easy to follow.
"We also love that Papas is not only a registered dietitian who has followed the diet to lose more than 100 pounds himself, but is also the founder of a health and diet center and Greece where he has successfully prescribed the diet to thousands if not millions of people who have achieved weight loss and a better quality of life with the Slimmer approach.
"In summary, we highly recommend this book to anyone looking to slim down the healthy and happy way."

Let’s start by taking a closer look at some of the diet’s traditionally Mediterranean-flavored ingredients you will be enjoying on the Slimmer program, why they are significant for good health and weight loss, and how they are utilized in the Slimmer diet program.

Fresh Fruits and Vegetables
Having the luxury of picking fresh figs from a backyard tree to eat with freshly made goat cheese and local honey is something few Americans know. But in traditional Mediterranean populations, high quality, locally produced fresh fruit, vegetables, and other ingredients were commonly and readily available, free of unwanted chemical pesticides, and packed with nutrients from the rich, untainted soil. As a result, these plant-based foods carried fewer man-made toxins and a much higher level of vitamins and minerals. On the other hand, when we fly in fruits and vegetables from far-off locations, particularly those that have been treated with chemicals to preserve their appearance and are grown in acreage that has been depleted of its nutrients, we lose the powerhouse of nutrition that we would get if we consumed only locally grown, organic counterparts. Therefore, choosing farm-fresh, nontreated produce is the best and healthiest way to replicate the traditional Mediterranean diet’s approach to fresh fruit and vegetables. And eating a good variety on a regular basis in order to provide an array of nutrition is recommended on the Slimmer program.
