About the Author

Chef Giovanni Gaudio is the Executive Chef and owner of BOCCONATO Culinary Excursions in Northern California. The grandson of Italian immigrants, Chef Giovanni has been in the food and wine industry, in one capacity or another, throughout his life. This includes owning and being the Executive Chef at BOCCONATO Trattoria, developing recipes and wine programs for restaurants, and conducting epicurean tours to Northern Italy. He also serves as a vice-chairman on the board of Slow Food Gold Country.

Always ahead of culinary trends, Giovanni foraged and hunted for his food living off the land in Alaska with his sled dogs for six years. As he puts it, "I developed a great respect and understanding for the land and the seasons. It's an important relationship for sourcing ingredients and using them in such a way that the essential elements and flavors of the food can come forward. The idea behind this philosophy helps to create recipes that are delicious, yet simple."

He is passionate about the culture and history behind traditional recipes and enjoys sharing his knowledge. He works as a private chef, teaches cooking classes and offers food and wine consultation.
