In March 2009, I was diagnosed with Celiac Disease. Celiac is a genetically inherited auto-immune disease in which an individual is sensitive to proteins found in wheat, oats, barley and rye. Celiac Disease affects more than one percent of the general population. Researchers believe that more than 3,000,000 people in the United States have Celiac Disease. That’s one of every 133 people and the numbers continue to rise.

Maintaining a gluten-free diet is the key to controlling Celiac Disease. Gluten-free items are more and more readily available at your local grocery market and restaurants. While the choices have become greater, this is a significant lifestyle change that affects an individual both physically and mentally. What you eat will always be a conversation at your next social event.
