Soups and side dishes may take a backseat in most cookbooks, but Walthers gives them top shelf in her kitchen. A variety of side dishes--salads, sandwiches, and heartier fare such as quesadillas and twice-baked potatoes--are paired to not only complement soup but "elevate" the humble dish. A comprehensive ingredient chapter and section on techniques--including tips for freezing stocks, simmering soups, and blending--precede the collection of recipes. Each soup (divided primarily by protein), is paired with a side dish; they include globally inspired dishes such as Thai carrot soup with a side of wild watercress spring rolls; Greek-style chicken and orzo soup alongside fattoush salad with chickpeas and feta; Italian wedding soup with kale and mini meatballs served with garlic bread; and Portuguese white bean and greens stew alongside Portuguese tapas. I went to a cooking demonstration by Catherine Walthers at Whole Foods and she made two soups in less than an hour. I have since made both from this book and they were as easy when I made them myself (once I got a sharper knife). Most of the soups keep and freeze well and are unique. My guests have been enthralled. The pictures by Alison Shaw are magnificent. Perfect food for fireside eating.

Practical and Creative This book has become a favorite.  I purchased it after finding and using Catherine Walthers other great recipe book: Raising the Salad Bar.  Two of my favorite soups from this book are, Summer Vegetable Soup with Pesto and Kale and Vegetable Soup with Farro (I used barley).  I have learned about some  new vegetables and how to use them more creative.  It is easy to use and makes a nice gift.  Today I made the Rustic Root Vegetable Soup with Wild Rice and Barley, Delicious.  Shared it with a neighbor. Definately recommend this book as well as Raising the Salad Bar.
