    WHEN CHILDREN HAVE FOOD ALLERGIES, SPECIAL FOODS ARE IN DEMAND

    When A Child Has Food Allergies, Special Foods Are In Demand Many parents whose children experience episodes of unexplained illness may feel relieved initially to learn that their children have 'only food allergies.' However, what they quickly discover is that cooking for children with food allergies, especially those with multiple allergies, can be quite challenging. When a child is allergic to gluten (wheat), there are no more quick stops for hamburgers. If eggs are the source of the problem then 'regular' birthday cakes and other treats must be ruled out. If dairy is the culprit, trips to the ice cream store must end. This dilemma is as difficult for the children as it is for the parents. The family must adjust to a new set of 'food rules.' They also need simple recipes and ingredient substitution ideas to make meal planning and preparation easy and nutritionally sound. Special Foods for Special Kids: Practical Solutions & Great Recipes for Children with Food Allergies is an excellent survival guide for parents, educators, chefs, and others. It explains what 'food allergy' really means, it provides tips to help children meet their nutritional needs, and it offers healthy recipes for breakfast to dessert. With user-friendly instructions and a 'Nutritional Analysis' for each recipe, this book takes the guesswork out of allergy-free cooking. Many of the recipes in Special Foods for Special Kids have been adapted so well that it is difficult to distinguish a difference between the customary recipe and the 'allergy friendly' one. For example, chicken pot-pie or chicken strips are a great family pleaser and can be made without using any offending ingredients. Dessert recipes (such as chocolate cake or peach cobbler) can be shared and enjoyed by everyone. Most baked goods can be adapted using rice flour instead of wheat, egg substitute (potato starch) instead of whole eggs, and organic soy or rice milk instead of cow's milk. It may take a little practice to get the texture just right, but ultimately, each recipe promises to be tasty enough for even the picky eater. Another dilemma for parents who must adapt to an allergy-free style of shopping is that the special ingredients may not be readily accessible in some areas. Not all communities have health food stores. Therefore, this book provides a Resource List for the most common allergy inducing substances: dairy, eggs, and gluten. Additionally, it gives an invaluable Resource Directory on where to call or write to order allergy friendly products or to obtain information on food allergies. Symptoms of food allergies may vary from child to child. The reasons behind the allergies can range from a hereditary pre-disposition to early food sensitization, and from environmental factors to underlying medical problems. Still, there are things that children with allergies and their parents know for certain: they need tasty, enjoyable, available, easy-to-prepare foods and support to make this health challenge part of a manageable lifestyle.

    I Could Have Figured It Out Myself

    I was really disappointed with this book. I have a one-year-old who has an intense milk allergy and can't eat or touch anything with diary in it. It's hard to come up with foods he can eat, so I find that his diet doesn't have a lot of variety. I was hoping this book would give me a fresh perspective. Instead, the book is full of regular recipes and there is just a note on the bottom of the page telling you to substitute soy or dairy-free products. I could have figured that out myself - I was hoping for unique, tailored solutions and got little help from this book.

    A 'MUST HAVE' COOKBOOK!

    This is an extraordinarily helpful and inspiring cookbook! As a professional in the field of special education for many years, I have worked with countless children who have food allergies. This remarkably comprehensive cookbook provides parents and caregivers with tremendous options. The recipes are both parent and child friendly. My hat's off to the authors for this 'must have' cookbook. It is first-rate!

    An honor to be nominated

    This book was just nominated for a James Beard Award--the Oscars of cookbooks! Wow! The authors really understand all the emotional problems (as well as the physcial ones) that face kids with food allergies, and their parents. They offer lots of great advice to go along with their easy, tasty, comfortable recipes.
