Americans currently consume strawberries all year round. Recent research strongly suggests that consuming them more often will be beneficial to their overall long-term health.

Strawberries are said to be the most powerful fruit as they are very rich in antioxidants.

When selecting strawberries make sure that they are a full red color and avoid any that are uncolored or white.

Ounce for ounce, strawberries have more Vitamin C than citrus fruit. One cup of strawberries gives you a whopping 140 percent of your recommended daily allowance of vitamin C.

Strawberries' versatility and adaptability add interest, lively color, and flavor to either indulgent or healthy recipes. Fresh, frozen, or dried, eaten alone or tossed into cereal, salads, or yogurt, strawberries naturally add a nutritional edge to an ordinary meal or snack.

The strawberry is an incredibly nutrient-dense fruit. In addition to being fat free and low in calories, strawberries have higher levels of vitamin C, folate, fiber, potassium, and other antioxidants than most other fruits like bananas, apples, and even oranges.

Vitamin C and fiber help keep you strong and healthy. Strawberries also contain phytochemicals that help your immune system fight to protect your health. In fact, all berries (blueberries, raspberries, blackberries, cranberries, etc.) are packed with phytochemicals.

Strawberry and Huckleberry Milkshake

This Northwest milkshake is a delicious combination for all strawberry and huckleberry enthusiasts.


1 c. fresh strawberries, rinsed, hulled
1 c. huckleberries, rinsed, stemmed
3/4 c. milk
1/2 c. vanilla ice cream
3 tsp. brown sugar


1. Place strawberries and huckleberries in a blender and purée.
2. Add milk, ice cream and sugar, blending until smooth.
3. Pour into chilled glasses and serve immediately.

Ginger Orange Strawberry Shortcakes

This makes a refreshing contrast of flavors with the ginger and orange creating a delicious and flavorful combination for this shortcake.


2 c. flour
2 Tbs. sugar
1 Tbs. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
2 Tbs. crystallized ginger, finely chopped
1 Tbs. fresh ginger, finely chopped
1 Tbs. orange zest
1/2 c. sour cream
1/4 c. milk
whipped cream
fresh strawberries, sliced


1. Preheat oven to 425 degrees F.
2. In large bowl, sift together flour, sugar, baking powder, baking soda, and salt.
3. Using pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs.
4. Add crystallized ginger, fresh ginger, and zest.
5. In small bowl, whisk together sour cream and milk; add all at once to dry mixture, stirring with fork to make soft, slightly sticky dough.
6. Gather into ball and place on lightly floured surface.
7. Knead dough gently 8 times, or until smooth.
8. Let rest 10 minutes on floured surface.
9. Roll out into 8-inch circle and gently lift onto baking sheet.

Strawberry Pineapple Ice Box Dessert

This is a great dessert to make ahead of time because it freezes well. You may as well double the recipe and keep one on hand for an instantly ready treat.


2 eggs
1/4 lb. butter
3 c. powdered sugar
1 box vanilla wafers, crushed
1 sm. can crushed pineapple, well drained
1 c. fresh strawberries, washed, hulled, chopped
1 c. ground nuts
1/2 pint cream, whipped, sweetened


1. In medium bowl, cream together butter, eggs, and powdered sugar.
2. Add crushed wafers, mixing until crumbly.
3. Press half of the crumb mixture in the bottom of an 8 x 12-inch baking pan.
4. Combine pineapple, strawberries, and half the nuts, and whipped cream; blend well.
5. Spoon this mixture into the crumb lined pan.
6. Sprinkle top with r

8. Refrigerate overnight to serve, or freeze until ready to serve.
9. Remove from freezer 15 minutes before serving.
