SAM TALBOT was runner-up on Season 2 of Bravo's Top Chef. His latest restaurant, Imperial #9 in Soho's Mondrian Hotel, opened in early 2011. He lives in New York City.

It was great to read Sam's story and how he's able to live with diabetes. His stories of travel were great, my personal favorite was the one in Japan. Being a non-diabetic I was inspired to live and eat better, not only for myself but everyone else in my family, especially those with diabetes. I realized that you can't change completely overnight, but the little steps help (cutting out sugar and using natural sweeteners instead). The photos are beautiful and the recipes are great and super delish! My favorites are Lemon Basil Roast Chicken, Pan-Roasted Shrimp with Wheat Linguine, and the Peanut Butter Oatmeal Cookies. The recipes are full of flavor and pretty easy. Sometimes finding certain ingredients can be challenging, but it's worth it in the end. I discovered my love for different foods that I never knew existed (shirataki noodles), thought I'd try or even like (kale chips!) and the benefits of them. I think it's a great buy for those who just want to live a healthy life, not only those with diabetes. This was my first cookbook that I've ever bought and it will forever be my favorite. As Sam says, "Cook Nice."
