Buttermilk Biscuits

Makes about 2 dozen biscuits

2 cups flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon sugar

6 ounces cold unsalted butter, cut in 1/2-inch chunks

1/4 cup buttermilk

1. Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt, and sugar in a large bowl.

2. Cut in butter using a pastry cutter or two knives until mixture resembles coarse meal.
Add buttermilk and stir just to combine into a soft dough.

3. Gather dough into a ball and place on floured surface. Using floured hands, knead dough 3 to 5 times. Roll out dough to about 1.2 inch thickness. Cut out rounds of desired size. Place biscuits on a parchment-lined baking sheet very close to each other and to the sides of the pan.

4. Bake for about 10 to 15 minutes, or until light golden brown.
