I'm so happy that I have what appears to be solid reasearch (and convincing ancedotal evidence as well) that can put my mind at ease about my new bread hobby. I've been looking for ways to maximize our health without reasorting to restrictive diets or eliminating things we enjoy, and the anti wheat movements have made me so sad. I stuck with learning to make bread anyway under the assumption that a sudden rise in dietary problems linked to bread must be related to additives or genetic tampering as bread has been a staple for milennia. The link netween commercial yeast and health concerns seems strong due to the timing of yeast hitting the market right when health concerns start rearing their heads.
Now I can not only feel at ease when baking, but I get to have fun tending to my sourdough and have silly fun saying things such as "thanks, I grew the yeast myself!"

This book is more than a cookbook. It explains the "why" of sourdough/natural yeast and the "how" of being successful at keeping your start alive. Then it is full of amazing recipes to successfully incorporate this type of cooking into your life. It also has details of converting your own recipes to this version of yeast. I love the beautiful photos, so you know what the finished product should look like as well. Better buy two, if you're giving it as a gift because you'll definitely want one :). This book is great! I had a sour starter but after reading the tips it is sweet and ready to use for baking.
