An introductory "Shopping Guide" covers buying and storing produce, meat, and fish, and dozens of sidebars and boxes provide more information on ingredients and techniques. The recipes, inspired by a wide range of cuisines, include make-ahead guidelines whenever possible, and headnotes offer serving suggestions and variations. Culled from Bon Appetit magazine's "Fast, Fresh, Easy" column, this recipe compendium is one of the largest available for those who love to cook and eat well but lack time on weeknights to make dishes that require hours to prepare. Although Fairchild forgoes estimates of how long each dish may take to make, and a number of entries may not qualify as "fast" for some cooks, especially beginners, the recipes are generally simple, if not foolproof, and cover a vast territory of cuisines. Ingredient lists are short, seldom running over 10 items and rely on the use of the freshest, finest foods available; a helpful shopping guide at the beginning is a welcome aid to those not yet versed in the ingredients' seasonality or optimal appearance. Similarly, a wealth of boxed hints and tips offer an extra level of help to get people cooking confidently. Even if the "fast" and "easy" labels don't always apply, anyone looking for a reliable source of relatively uncomplicated, tasty dishes will be thrilled to find this. (Oct.) This is a very comprehensive volume of quick and easy recipes from Bon Appetit magazine. Having been confronted with many new ingredients from my CSA share, I was always able to find recipes for them in this cookbook. Fresh in this case means the ingredients. These are made from scratch recipes and many (if not all) can be made is less than an hour. A great go-to cookbook for those busy evenings.

I'm made a handful of recipes from this book, and all of them were delicious! Most of them are perfect for quick, weeknight dinners. I would definitely recommend this book and the 40th Anniversary orange one as well. Great recipes!

A terrific recipe collection at a very fair price but shame on B&N for promoting the purchase with a peel-off sticker on the cover advertising a 1-year Bon App&#233;tit subscription that was linked to an offer a year out of date and long since expired. Suggestion to B&N...if it isn't applicable, don't advertise it.

I use this cookbook all of the time. It's practical, easy to follow and the recipes and excellent. Haven't found one yet that I don't like. Doesn't use crazy, hard to find, exotic ingredients.
