These two are the professors @ MUW Culinary Arts Institute. I am grateful to be one of their students. Dr. Fitzgerald's understanding of his subjects (science and food) put him in a catagory where few can stand. His classroom presentation is intense, this book is a compilation of his notes from that Food Science class. This book is #1 for anyone who is truly interested in Food Science.
