This is a beautifully illustrated cookbook with gorgeous photos of the foods in the recipes on every page. The book includes short histories of the featured countries as well as descriptions of food and drink, and festivals. The introduction contains comprehensive information about equipment and ingredients. I can now shop with greater confidence in my local Mexican markets. I've tried only one recipe, for Cheesy Eggs, and they were delicious; when served at a recent family buffet, these were a hit. The recipe was easy to follow, although I did have to increase the mayo by quite a bit. The book contains a chapter on nutritional information which is useful for counting calories, etc. I plan to make more dishes from this book and I recommend it to others who are interested in Mexican, South American, and Caribbean cooking.

A great way to learn about cooking in the South American region. I've had success at two recipes so far and I hope to cook a lot more.

My son looked thru it before I could and marked pages of recipes he wants to try. We love mexican food and this one is full of great recipes.
