A note in the front "From the Author" introduces young people to traditional recipes from other countries, adapted to work in their kitchen. His goal is to introduce a world of exciting and satisfying recipes, along with the basic principles of kitchen safety, food handling, and common-sense nutrition. These are classic recipes from Greece that range from very basic to challenging. "Before You Begin" includes "A Word About Safety" and "Cooking Terms." Next is "The Regions of Greece and How They Taste"—a wonderful description of the areas with information about certain food products. "Appetizers" and "Salads" are next, with the perfect Greek salad. "Soups" are next, then "Vegetables." "Pies and Pitas" include Chicken and Cheese Pies. "Entrees" include the Greek specialty of Roast Leg of Lamb. For "Dessert"—Yogurt Cake with Fresh Orange Syrup are portrayed in a great colored photograph. Sections in the back include "Helpful Kitchen Equipment and Utensils," "Essential Ingredients in the Greek Kitchen," "Metric Conversion Chart," and the index. Gr 5 Up-Mouthwatering, close-up color photos make this book a visual feast. Locricchio begins with a region-by-region overview of Greece, highlighting the natural produce of each area and the resulting cuisine, then groups his recipes by type-"Pies & Pitas," "Entrees," etc. A section on kitchen safety encourages enlisting an adult as "assistant chef" and gives particulars on using knives. The recipes are at least moderately difficult, but instructions are carefully spelled out, with all cutting and chopping occurring before the actual cooking. Fresh, healthful ingredients are emphasized, and suggestions are offered for adapting the recipes for vegetarians. Among the dishes are "Greek Salad," "Yogurt and Cucumber Dip," "Eggplant and Ground Meat Casserole," and "Yogurt Cake with Fresh Orange Syrup," but there is no recipe for gyros! Lynne W.
