The recipes in this book are fairly simple and easy. I was impressedby the black bean and butternut squash chili - it really was so delicious it didn't need cheese, and was easy to make. Also liked the curried rice and lentils, and plan on trying a few other things. The meal plans with nutrition information show someone how to eat well on a vegan diet, and that they are definitely getting adequate amounts of protein. I am not following the meal plan at this time but eating more vegan foods, and trying out the recipes I might like. Compaired to most vegan recipe books I have seen, these recipes are the easy and simple. Wish they offered better preview, but google books has a better preview available. Glad I checked it out. Definitely recommend this book if you are looking to transition to being vegan, or just looking for healthy recipes.

It has a great way to start. Love the recopies, love the planning to get into vegan.
