According to the American Diabetes Association, in 2012, 21 million Americans were living with diabetes, the seventh leading cause of death in the USA. One in 11 Canadian adults suffer from this progressive disease. In this book, dietitian and diabetes educator, Cipullo and the editors of Prevention magazine offer practical, scientifically based advice to "those who have the ability to prevent or reverse insulin resistance." Comfort food, writes Cipullo, is carb-laden and causes a harmful spike in blood sugar. To avoid this, she suggests limiting carbs, increasing fiber and eating healthy fats that contain omega-3 fatty acids. The three introductory chapters discuss ways to modify recipes to include a maximum of 60 grams of carbohydrates per meal and a detailed action plan to manage the disease. Replete with 200 mouth-watering recipes, this diet and cookbook fully delivers on its promise to offer energizing and healthy comfort food recipes. Mango-tuna spring rolls, stuffed potato skins, and spiced sweet potato chips have 9 to 17 grams of carbs per serving. The chocolate-almond cake (18g), maple-walnut cake (22g), and chocolate cream pie (21g) offer some sweet indulgences.
