Diet Workshop is a national company with 25,000 members throughout the Northeast and Midwest. Founder/director Lindauer and Sampson, a food writer and former chef, present 200 low-fat, low-calorie recipes developed for the Workshop. Most are quick and easy to prepare but on the sophisticated side-Chilled Curried Tomato Soup, Roasted Five-Spice Chicken, Balsamic Onions. Some call for exotic and/or expensive ingredients, such as Arctic char, but overall these are appealingly different, yet relatively simple dishes that don't seem like diet food.
