Join our culinary journey from the snack-sellers on the beaches of Mumbai to the rossogolla-makers of Kolkata, from the tea gardens of Assam and Munnar to the makers of sweets in Delhi. Discover the vast array of dishes which make up the cuisine of today's India: from traditional Mughal dishes such as korma and kofta, to a selection of breads, dals and fragrant basmati rice dishes including pulao and biryani.

Each recipe is photographed as it is made, and is accompanied by helpful pictures of techniques, equipment and ingredients. Stunning photographs shot while on location in India show how to identify and choose produce; from fresh vegetables straight from the market to seafood, spices and pickles.

Special sections partner with the recipes to explore the essence of Indian food and drink. These include an exploration of spices, breads, and seafood which have all been photographed to make identification easy. There are also sections on street food, sweet-making and the different grades of Indian tea. A glossary of food, cooking and equipment helps you identify and source your ingredients and offers helpful tips on substitutions.

The team involved in The food of India had a passion to create the definitive guide to real Indian food. To discover the secrets of India’s kitchens, Kay Halsey, the Project manager, Lulu Grimes, food editor, Susanne Geppert, designer, and photographer, Jason Lowe, travelled through seven Indian states. Along the way they photographed food, talked to chefs, met food producers and researched ingredients and local history. This enabled them to write with first-hand experience about a country that has an astoundingly varied culinary history.

Recipes were provided by Priya Wickramasing and Carol Selva Rajah, both established writers with considerable knowledge of Indian cuisine.

    Great Book

    I am an indian picky about how my food is cooked and ever since I have bought this book it is a constant reference guide for my day to day cooking.

    Beautiful pictures, great recipes

    I got this book from a friend who is Indian. I love being able to see the vibrant color pics of the meals and recognizing the dishes that I have eaten in restaurants. Also, very nice coffee table book
