Meet the Author

ALLISON AREVALO  started cooking pretty much when she was able to stand. Born into a food-loving Italian family in New York, she helped her great-grandmother cook massive meals for Sunday family dinners and learned the basics of cooking in that kitchen. Allison pursued a career as a marketing exec in NYC before deciding to follow her true passion in life: food. In 2008, Allison and her husband took a leap of faith: they quit their jobs and drove across the country to Oakland, CA, in hopes of one day opening a restaurant. Allison freelanced as a food writer and created the Local Lemons food blog, which showcased her original recipes. It received high accolades from Saveur.com, CNN, Serious Eats, and WSJ.com, among others. Her dream came true in 2010, the year she and Erin opened the doors to Homeroom.

ERIN WADE is a chef-turned-attorney-turned-chef-again. Erin’s love for cooking was sparked by her father’s homemade mac and cheese and her mother’s vast cookbook collection. While receiving her undergraduate degree at Princeton, Erin was a restaurant critic for the Daily Princetonian and apprenticed at night in the kitchen of a local French restaurant. Upon graduating, Erin worked as a line cook and in pastry at restaurants in New York before attending law school at Berkeley. After practicing law for a year, Erin came to her senses and decided to return to her love of cooking by opening Homeroom with Allison. She lives in Oakland with her husband, Uri, and her daughter, Ellie—her favorite cooking partners.

Introduction

Hi! We are Erin and Allison—and together we own a restaurant in Oakland, California, dedicated to the best food on earth: macaroni and cheese. A few months ago a neighbor came into our restaurant, Homeroom, to tell us a story about her daughter’s first words. The mother explained, “She just kept saying ‘ah-ah-chee.’ We couldn’t figure out what she was referring to until we passed your restaurant and she started yelling ‘ah-ah-chee’ over and over and then it hit us—‘mac and cheese’!”

Whether a child’s first words or an adult’s cherished food memories, one of the most rewarding parts of owning a mac and cheese restaurant is how people of all ages and backgrounds have deep connections to our food. A close second is turning those connections upside down by making mac and cheese that is even more delectable, rich, and unique than people’s best memories.

People ask us all the time for our recipes or for advice on how to improve their own homemade mac and cheese. This book represents everything we’ve learned after making thousands of mac and cheeses, from recipes to problem-solving. We’re excited to bring these ideas beyond the confines of our cheesy little corner of the world and into your home.

Strawberry Crisp

This dessert is a great summery treat because you don’t have to bake the entire dish—only the topping goes in the oven for about ten minutes, so it’ll keep your house nice and cool on a hot day. Plus, you get to enjoy the freshness of the berries at their peak. With a layer of fresh macerated berries (berries that have been mixed with sugar to bring out their juices), crunchy crisp, and a dollop of fresh whipped cream—you can’t go wrong. You can also try it with other summer fruit—though you will want to adjust the amount of sugar depending on the sweetness of the fruit, and probably omit the balsamic vinegar.  Serves 4
 
1 pound strawberries, stemmed and quartered
3 tablespoons granulated sugar
1 tablespoon balsamic vinegar
1 cup unsalted butter, melted
13/4 cups all-purpose flour
1/2 cup graham cracker crumbs
1/4 cup packed light brown sugar
Whipped cream (see Mint Whipped Cream, page 98, or you can use store-bought)
 
Lesson Plan
Preheat the oven to 400°F. In a bowl, mix the strawberries, granulated sugar, and balsamic vinegar. Let stand for at least 20 minutes.

In a mixing bowl, stir together the butter, flour, graham cracker crumbs, and brown sugar. Spread on a baking sheet, and pat down the mixture on the sheet with a spatula.

Bake the crumb mixture until it turns light brown, about 10 minutes. Let cool completely on the baking sheet, then break it up into little chunks using the spatula.

To serve, spoon the macerated strawberries with some of the liquid into individual bowls, top with crumbly topping, and a healthy dose of whipped cream.

    SO GOOD!!!!

    I LOVE THIS BOOK. WHAT A GREAT LITTLE BOOK TO HAVE. I LOVE TO MAKE MAC&CHEESE WITH DIFFERENT CHEESES. TRY GOAT CHEESE EXPENSIVE, BUT SO-O-O-O GOOD. SAW THIS ON QVC, AND BARNES & NOBLE DOES IT CHEAPER.

    Worth every penny!

    In a sea of mac & cheese books, all proclaiming their superiority, this book DELIVERS. If you've never made a béchamel sauce (or don't even know what a béchamel sauce is), this book will enlighten you on the subject. The recipes are easy, well thought out, and tasty! As I've gotten older and more experienced w/ cooking in general, I've come to realize that simple typically is better. For instance, I wanted a good homemade mac & cheese recipe. After trying many cookbooks and many complex recipes with tons of expensive ingredients ($50 mac & cheese anyone?) this book has ended my search. Get the book, you won't be sorry.

    Great gift iteam

    I love this cookbook, the recipes are all simple to make, although some contain a lot of high calorie/ fat ingredients, but they can be changed for healthier substitutes. Great gift book for anyone who enjoys cooking and pasta!

    Macaroni and Cheese, the ultimate comfort food for most of us. The Mac + Cheese Cookbook is in fact teaching cookbook that shows us that Mac & Cheese is not just for kids anymore. These simple to read and follow recipes show the versatility of macaroni and cheese. It can be as simple as the plain side dish to the star of the dinner table. This is a truly new cook friendly cookbook in that it gives step by step instructions, often with pictures to show you how the process is done. They also give tidbits on how to correct common mistakes.

    I was surprised to see a Mac and Cheese breakfast recipe and another for dessert and had to try both. Imagine my surprise when my family actually liked them. Our most favorite was the Patatas Bravas Mac. You will think you have died and gone to heaven. Just to make sure that your meal will be talked about the next day to friends there are some great side dish recipes included as well. Rounding out the meal are the dessert recipes. You have got to try the Peanut Butter Pie.


    If you have never thought Mac and Cheese was that tasty of a dish or used a pre-made or boxed one because you did not think you could make one from scratch on your own then the Mac + Cheese Cookbook is a must have. You are bound to be a few you will be adding to your favorites. None of these recipes requires a degree in culinary arts, but when you serve them people may think you have one. Pick up Mac Cheese Cookbook today to add to you most reached for cookbook shelf.

    I wonder what these ladies will tackle next. If it is as well done at this one I can guarantee it will be on my personal I want list.

    A Must Have For Your Kitchen!

    I must admit the cover of THE MAC & CHEESE COOKBOOK captured my attention the moment I saw it. Doesn’t it look yummy? Visions of mouth-watering dishes of mac and cheese sprang to mind and I had to know more. I’m happy to say I wasn’t disappointed by the cookbook, quite the opposite. I found this charming cookbook to be packed with delicious recipes, easy instructions, gorgeous color photos, and extremely helpful tips. Authors (Chefs) Allison Arevalo and Erin Wade have compiled tasty recipes that will have you eager to try all 50 of them. Each recipes is written in simple, easy steps with a bit of information about the dish. In addition, many are accompanied by a beautiful full page color photo of the completed dish. There’s also a section on selecting the right noodles and how to prepare them properly. A highlight of the book for me was the step-by-step instructions and photos on how to prepare the mac sauce - the base of each recipe. The authors also note problems that can be encountered preparing the sauce and the simple solutions to resolve these issues. Each recipe also includes a beer and wine pairing to enrich the meal. To help even more, the authors have included recipes for fun side dishes and desserts to compliment the mac and cheese. Some of the recipes are: Trailer Mac, Mac & Blue, Shepherd’s Mac, Winter Citrus Salad, Peanut Butter Pie, and Dessert Mac. I tried the Vermont White Cheddar Mac and was delighted with my results. The recipe was easy to follow, the instructions helpful and the end results delicious. While this dish took a bit longer than opening a box of mac and cheese, it was well worth the effort. Once the simple mac sauce is mastered, the recipes are a breeze. Mac and cheese, the ultimate comfort food, can be prepared every day of the month with this enticing cookbook and never be the same. If you grew up loving mac and cheese, this is a must have for your kitchen. Arevalo and Wade are the owners/operators of the wildly popular San Francisco Bay Area macaroni and cheese restaurant known as HOMEROOM. A school theme is sprinkled throughout the restaurant and the entire menu is under ten dollars. For delicious, quick and easy dishes the entire family will devour, THE MAC & CHEESE COOKBOOK is the perfect solution.
