Doctor Reveals Secrets of Middle Eastern Dietary Traditions

Abdallah Taha wants to help you live a healthier life.

In fact, he is passionate about it. Dr. Taha's interest in nutrition and exercise arose because of his own unfortunate health crisis, which he details in this book.

Dr. Taha is the son of a farmer from a small farming village near Jerusalem. As he grew up, he watched the elders of his village live long and productive lives with little to no medical treatment. As the diet of the region changed over the years to include such items as soda, white sugar and sweets, and as the incidence of stress increased, he began to notice that the life expectancy in his region was changing.

"Diet is not a joke; it is a lifetime commitment and not a change in eating habits that lasts for a few weeks," Dr. Taha said. "Looking good is fine, but your health is what matters whether you are young or old. Eating a healthful diet is a lifelong issue, and improving your daily food choices can be the start of a new way of life."

At the beginning of his book, Dr. Taha seeks to educate the reader as to what a healthy diet is, how large a portion size should be and what the indicators of diabetes are. He discusses such subjects as the Glycemic Index and the Glycemic Load.

He offers 4 tips starting with the letter w:
. Walk uphill, downhill, in the mall or the park until you sweat to remove toxins
. Work can be the best exercise, plant trees, do heavy yardwork
    . Watch weight and waist
. Water, drink eight to ten cups per day of spring water

He then asks the reader to eat 4 foods starting with the letter F:
. Fiber, as a colon detoxifer
    . Fish, as a life-extender, containing omega-3's
. Fruits, especially grapes, containing resveratrol
. Fat, mainly virgin olive oil

He also advises the reader as to what foods to avoid:
    . No white sugar
    . No white bread
    . No white rice
    . No white potatoes

He proceeds to give other details of his diet, such as the kinds of proteins to eat, information on fruits, salads and seeds and how to replace the four "white foods." He also explains the benefits of vinegar, and how it improves insulin function and cardamom to improve digestion and how they enhance brain function by increasing the blood flow in the brain.

Dr. Taha also gives the reader his own version of the food pyramid, which he calls the Farmer's Son's Pie. It is based on a 2000 calorie a day, non diabetic diet.

He talks about different types of exercises and adaptations for those with chronic diseases such as diabetes, heart disease and asthma. Dr. Taha's book is packed with advice about the benefits of different foods, vitamins, spices and exotic herbs.

"A healthful diet is a nutritional mosaic that includes vegetables, fruits, oils and spices, legumes, nuts and seeds, as well as the essential vitamins and minerals those foods contain," he said.

He also describes the health benefits and adverse effects of several foods, including the vitamins and minerals each contains. He speaks of antioxidants, detoxifiers and foods that have anti-Alzheimer's properties. He discusses the causes of stress and ways in which to manage your stress. He spells out the importance of "healthy life helpers" such as cancer screenings and smart eating habits. Lastly, he discusses osteoporosis and how weight-bearing exercise is so important in controlling the loss of bone density.

"When a muscle pulls on the bone to which it is attached, it facilitates the deposition of calcium in that bone, whi
