Introduction

As food professionals, we've had stand mixers in our kitchens for longer than we can remember. Because of their versatility, they are perhaps the most integral piece of culinary equipment we own. Certainly our cupboards are filled with all kinds of machines, tools and gadgets, but we can turn to no other one machine to knead dough, grind meat, slice vegetables, whip egg whites and make ice cream. Because of that, we have come to rely on our stand mixers as trusted culinary companions.

As cooking teachers, though, we are always surprised to find that so many of our students don't own a stand mixer — and if they do, they are often unaware of all of its capabilities. One student that stands out in our memories had had her own stand mixer for years, but had never used any attachment other than the whip. She had long ago put away her flat beater and dough hook, never stopping to consider how they might be used. Once we clued her in to the possibilities, she felt as though she had rediscovered an old friend.

There are many brands of stand mixers on the market, and more and more of them are developing attachments that will revolutionize the time you spend in the kitchen: pasta makers, food grinders, grain mills, juicers and ravioli makers all offer you the chance to be more creative and spend less time making dinner.

The stand mixer, with all of its available attachments, can now complete almost any culinary task. While the majority of handheld mixers have stood still in their evolution, holding fast to their limited power and functions, the stand mixer has blossomed into a culinary work center capable of saving you time and money. Who would have thought years ago that this machine we've always turned to for preparing lemon meringue pies and cinnamon rolls would be capable of producing perfect pasta or paper-thin mushroom slices or mountains of grated cheese, all so quickly and efficiently?

    Mixer Bible: Over 300 Recipes for Your Stand Mixer

    It's hard to live up to the term 'bible'. It must be true because there are many other cooking related books on the market right now using the same term that don't seem to even try. The good news about this book, is that it makes a valient effort. If you own a stand mixer, and have already made the $200 and up investment, putting another $20 dollars toward this book seems a smart move. The Mixer Bible introduces you to the basic as well as more advanced features of your machine. About half of the recipes do not need any attachments beyond what you get with the standard mixer. The other half show you how to make the most of the optional attachments available. What I really liked about this book is the quality of the recipes. They are easy to follow, and after executing well over a dozen, not one has been a let down. The recipes are detailed and will even tell you what speed to set your mixer at for each step. There are only a couple of issues I had, or could imagine others having with this book. It's definitely intended for the KitchenAid mixer. Although, I think the average cook could work with most of the recipes using a different brand. Some of the recipes are geared towards attachments that are a little esoteric. The rotor/slicer is not an attachment that most cooks will own. That said, I took the recipe, used my food processor for the slicing and proceeded to make the best vegetable soup recipe I'd ever made. So, even with a few minor drawbacks, I feel this book is a great investment for anyone with a mixer.

    Mixer Bible: Over 300 Recipes for Your Stand Mixer

    This cookbook is absolutely a must if you own a stand mixer. The recipes are great and the helpful info about how to properly use your mixer is invaluable. If you're going to spend the money on a good stand mixer, you should really make sure a have a great book like this to help you learn how to make the most of it!

    Mixer Bible: Over 300 Recipes for Your Stand Mixer

    I received this book as a gift alnong with several attachements for my Kitchen Aid a couple of months ago. It has been incredibly useful and really expanded usefullness of my Kitchen Aid. The recipes I've used ( 6 or 8) have been easy to follow and tasty. The pasta recipes and the pasta roller attachment are real winners. This is a great book if you've got a Kitchen Aid.
