An excellent book full of wonderful recipes. I have made 15 of them so far, and not a bad one in the bunch. I can't tell you how cool it is to make steel cut oats in 3 minutes at high pressure. If you have never used a pressure cooker, Jill has provided an excellent resource of how to best select and use a pressure cooker to make healthy, vegetarian meals that take a fraction of the time and save energy. I have used a pressure cooker for nearly 20 years mostly just to cook beans and brown rice. Now I have a wonderful variety of other recipes to make. Jill is also a very helpful person; she has answered my emails about some questions I had regarding my pressure cooker and certain recipes. I also have Lorna Sass's book "Great Vegetarian Cooking Under Pressure," which is a pretty good book, but I find this book to be better because the recipes are based on stuff I can easily find at my regular grocery and the farmer's market. Best way to start eating a whole foods, plant-based diet.
