Editorial Reviews

Publishers Weekly
12/23/2013
James Beard Foundation hall of fame member and award-winning cookbook author Ojakangas (The Finnish Cookbook), invites soup and bread lovers to sample, "the rhythm of the seasons" in this plentiful pairings cookbook. Ojakangas's "soup travels" has earned her a qualifying role to educate and suggest some of best and simplest seasonal recipes. After a brief description and glossary of stocks, broths, and basic breads, the book becomes a compilation of seasonal favorites included with cultural commentaries. Perfect for traditional holiday recipes or impromptu get-togethers, every ingredient contains only in-season vegetables or fruits. Some of standout pairings include: "Spicy Mango Melon Soup & Lemon Poppy Seed Muffins," a spring time recipe which Ojakangas recommends for Mother's Day brunch. For summer, she offers a "Spicy Revitalizer & Carrot Breadsticks." Autumn's "Colombian Chicken and Potato Soup with Corn & Almojabanas" and winter's "New Year's Good Luck Lentil Soup & Ezekiel Bread" are nice and hearty for those colder months. Ojakangas's creative and flavorful recipes are a soulful reminder of the "pleasure of soup and bread." Color photos. (Oct.)
From the Publisher

"[The Soup & Bread Cookbook] provides ample excuses to turn on the oven and warm up the kitchen, and as the days get crisper and darker, I will be hugging this book close."

"This is definitely a year-round kitchen companion."

"I tend to view bread as a vehicle for sopping up the last drips from the bottom of the bowl, but in Ojakangas’ hands, it’s obvious that the relationship has much more potential…Ojakangas gets really inventive with her breads."

—THE KITCHN.COM "This book is a delight…Every recipe we have tried has been 5 star quality." – SWEETHAPPYLIFE.COM

"This…will banish the Campbell’s from your cupboard forever."

This book is a compilation of soup and bread recipes paired up as simple meals. The book is divided up by the seasons: Springtime, Summertime, Autumn and Winter.

The book begins with the basics: Stocks, broths and "basic breads". Various tips for making broths, and tips for bread. It covers various seasonings and toppings for bread, how the different additions affect the bread flavor and consistency. Then it provides basic recipes for Fresh Baguette, A Basic Vegetable Soup, and Basic Home-Bakes Bread. This is the basis for what the rest of the book builds on.

Spring brings pairings like Spicy Mango Melon Soup & Lemon Poppy Seed Muffins. Summer presents Lemon, Corn and Shrimp Broth & Asian-Style Flatbread. Enjoy Yam and Sweet Onion Soup & Buttermilk Corn Muffins in the Autumn, and snuggle under a blanket in Winter with some Onion Barley Soup with Mushrooms & Honey Bran Muffins.

My final word: I love the idea of this book. I'm a big fan of soup and bread for dinner or lunch! There is a great variety of soups and breads to be found, and the book abounds with beautiful color photos. I also love the way that it is divided by seasons. That makes it so simple to pick something for dinner!

Soup is something we crave year round. With such a variety available from the rich Roasted Red Pepper Soup to the basic stock recipes. This is the cookbook for any soup lover like myself. It even goes so far as to match the soups with a bread side. Not being the best at making bread I was interested to see if I would be able to manage the recipes included in The Soup and Bread Cookbook. Divided into seasons the soups were suited to the warm summer and the blustery winter nights.

I made the Roasted Red Pepper Soup and tried my hand at the Herbed Biscuit Muffins. The soup was as easy as could be and so delicious that there were no left overs. My family has experienced my bread making attempts in the past and were dubious about trying the muffins. With a little trepidation I watched the basket travel around the table and each to one. Then sighed in relief as the basket soon became empty.

For my mother I made her favorite, Fresh Pea Soup and the Egg Salad Sandwiches. She actually asked me if I would make it again soon, as she liked it so much. My nephew how like myself despises peas tried it and told me he liked the way it tasted. I am ashamed to say I only had a sandwich but was surprised how easy the whole wheat bread was to make. I also made the rye bread to make Reuben Sandwiches with. Both were better than any bread I have bought in the store. Thank you for making it so easy.

I now have beef, vegetable and chicken stock canned on my extra refrigerator's shelf for future use and a new confidence in my abilities to make bread. With the holidays soon to be upon us I look forward to trying a few of these recipes for visiting family during the holidays. Especially the yeast rolls and Cinnamon Raisin Walnut Bread. I hope to can some of the soups for easy use for the family when our schedules are so hectic that a quick meal doesn't have to be unhealthy and full of preservatives. Unsure of the time frame to keep these soups I only made only what I could use within the month. The still tasted as great as the day I made them. I have not tried freezing any of the breads yet so I can not give an opinion of freezing them. But they truly were so easy that it is simple to make them as I need them.

I hope you will try the Soup and Bread Cookbook. The recipes are so easy to follow. Anyone can look like an experienced cook. Just stand back and accept the praise that is sure to come your way.
