I originally bought this book for a friend. Like the author of the book she was diagnosed with celiac disease and had also been a vegan for many years. I bought her the book for some inspiration when she was feeling down about it.

She invited me round for dinner and cooked me the French Country Stew and it was delicious, full of flavour, really filling and healthy too. I love butternut squash, and although I am not vegetarian myself I didn't miss the meat in this dish at all.
