Unlike tofu cookbooks that call for unfamiliar and hard-to-find ingredients, Tofu Mania incorporates tofu into such familiar dishes as macaroni and cheese, pizza, mashed potatoes, chocolate cake, brownies, and even whipped cream-without sacrificing great taste or texture. The 120 easy-to-prepare recipes cover, breakfast, lunch and dinner, as well as beverages, appetizers, dips, salads, and desserts. This is not specifically a vegetarian cookbook - most recipes replace some of the fat from eggs, meat, and dairy products, and thereby lower their fat and cholesterol content. Author Biography: Brita Housez, a former artist and communications consultant, began to search for ways to cook with tofu five years ago when her husband was diagnosed with high cholesterol. Recent scientific studies repeatedly conclude that tofu, along with other soy foods, can help prevent forms of cancer, menopausal symptoms, heart disease and strokes. As little as two ounces a day can help ward off a range of incapacitating and sometimes deadly diseases. The author was concerned about high cholesterol and the side effects of cholesterol-lowering medication. Through the use of tofu products in her daily life she was able to lower her cholesterol level sufficiently to no longer require medication. The recipes here are wonderful. Imagine feasting on: Cherry Pancakes, Cinnamon-Raisin Doughnuts, Crab-Stuffed Wontons, Gingered Carrots, Almond Chicken with Snow Peas and Apricots, Pork Tenderloins with Wine Sauce, Chilled Strawberry Soufflé with Strawberry Sauce, and Chocolate Brownies! The detailed nutritional analysis provided for each of the recipes includes calories, protein, carbohydrate, total fat, cholesterol, fiber, vitamin A, folate, vitamin C, sodium, potassium, iron, and calcium. General tips are given for using the three basic types of tofu, along with ways to use tofu in your own recipes. This is an excellent cookbook that is sure to be widely read. Tofu Mania presents 120 recipes suitable for breakfast, lunch, dinner, snacks, appetizers, or desserts. Recipes are simple, easy to make, and delicious. No muss, no fuss. Best of all, each one comes complete with full nutritional analysis including calorie count, fat and fiber gram count and vitamins per serving. Not only for strict vegetarians, traditional meat recipes are included to demonstrate tofu's versatility, such as low fat chicken or turkey burger or stuffed chicken breasts with Alfredo sauce. Other easy vegetarian entrees include Beans, Lentils and Tofu in Spicy Tomato Sauce, my personal favorite. Effortless variations, such as Meatless Tofu Chili are frequently suggested at the end of a recipe. Is there a place for tofu in your life? Tofu Mania is convincing to tofu novices. If not, classic desserts like Carrot Cake and Fresh Berry Clafoutis will help persuade the most reluctant fan. Other homey, comfort foods that are nutritious, delicious and easy are Cornbread Pudding, French-Style Polenta (or Grenocchis Grenoblois) and Mango Couscous or Mushroom Tofu Medley.
