We eat a lot of tortillas at our house. They are inexpensive, yummy, and can be made into many things. However sometimes I run out of ideas which makes this book handy! This book contains so many different recipes organized into ten different categories including breakfasts, starters and snacks, soups salads and sides, wraps and ‘ritos, meat main courses, meatless mains, tux-worthy tortillas, comforting casseroles, fun with tortillas, and sweet endings. We really like the introduction in which the author tells how to heat tortillas up, how to be creative with tortillas and make baked tortilla chips, fried corn tortilla chips, tortilla cups, and both baked and fried taco shells. For some reason I never realized I could make my own tortilla chips. The appendix includes instructions on how to make your own tortillas including flour, corn, multigrain, and sweet flour tortillas. Some of our favorite recipes include new Mexican benedicts (breakfast), tortilla crusted French toast (breakfast), spinach and cheese empanadas (starters and snacks), baked wontons with sweet and sour dipping sauce (starters and snacks), green chile stew with warm tortillas (soup, salads, and starters), calabacitas burrito, California burrito, tortilla crusted stuffed chicken breasts (meat main courses), grilled fish tacos, (meat main courses), carne asada tacos, Philly cheese steak tacos, Mexican lasagna (comforting casseroles), tuna melt tortillas (fun with tortillas), tortilla lime bark (sweet endings), and apple cinnamon tortilla pockets. This is a recipe book that gets used often at our house. We like the recipes as they are and they also give us some great ideas to make our own tortilla creations. I received a complimentary copy of this book to facilitate my review. This did not affect my opinions.

It would have never occurred to me to put salmon and goat cheese in a tortilla, but it is delicious. The vegetarian recipes in this book are also fabulous.
