Bloom begins with an illuminating discussion of candymaking essentials, from ingredients to tools to techniques, and then shares more than 180 exquisitely detailed recipes for truffles, caramels, nut brittles, fudge, and more. Super book with yummy chocolate truffles.

This is a great candy making book. Carole makes it so simple to make a variety of candies, especially chocolate candies (at home). I love her chocolate truffles and all of the things she does with nuts. But I think my favorite recipe is the chocolate clusters. I highly recommend this book. I am going to give them as presents for the holidays.

Truffle making has never been this easy!

I thought everything that could be covered in candymaking was taken care of in the first book, but this revision proves me wrong. Not only are there new recipes, but updates on equipment and techniques. My personal favorites are the truffles, especially the Green Tea Truffles. Next on my list is mastering Pralines and English Toffee! You're just in time for my holiday gift-giving.
