We started our vacation in Fort Lauderdale on a cruise. To start we went to a local restaurant near the ship port where we were leaving from - where we found a great book for sale by the restaurants chef. Chef Michael Bennett came to our table and explained how he came up with all these exotic recipes. He has been traveling and working in the Caribbean for four years and when he got back decided to write two cookbooks about the foods he discovered there. His first book is In the Land of Misfits, Pirates and Cooks and his latest "Underneath..." is about the more exotic foods he discovered while working on several tropical islands. "Underneath a Cloudless Sky" talks about what it is like to work in South Florida as a chef and has a lot of usefully recipes for all of us that like to surprise our guests with the unique and un-experienced. We found the pictures as enjoyable as the recipes. Beautiful color pictures throughout of the finished recipes and various tropical locations across the Caribbean and South Florida. Recipes will make you think...about what is more to come from this chef.
I was looking through books online and found this one. It was quite an unusual title and cooking concept from a chef that is well-known in South Florida. Chef Michael Bennett is well known for his Tropically influenced recipes and menus in South Florida. Being the chef at one of South Florida's best seafood restaurants, is another reason to get this book. He uses his experiences in the professional kitchen to help your understand the concepts of healthy, seafood based tropical cuisine. Both of us use the book at home. My daughter loves the idea of the exotic products that are used for the recipes, I enjoy the added cooking insights and cooking tips that come along with all the recipes.Just pick a weekend during any summer month, grab this book and start on a journey to the Caribbean without having to jump on a airplane.
