Meet the Author

Lemar Farrington is a talented chef that has an advanced knowledge in the field of culinary Arts. Born and raised on the island of St.Thomas, for 10 years he has been in many different positions honing his skills as a chef and an artist. Over the years he's developed his personal cooking style that is called: Upscale Caribbean and this is what this book is about. He has dabbled a bit in molecular gastronomy and is also very adept at pastry! His philosophy on food is to "make it about the food! This is an art that requires a level of craftsmanship, and although speed, and volume are supporting elements, we cannot sacrifice quality for any of these. We should always strive to make it about the food because that’s what chefs do, they cook food!" Being raised in the Caribbean, and although having a broad knowledge of the culinary arts, he chose his particular cooking style as a way to bring respect and admiration to Caribbean cuisine, which is often overlooked.

    I think this is a great book as caribbean cooking has a zest tha

    I think this is a great book as caribbean cooking has a zest that is a style of its own, It is true that this type of cooking can be overlooked and has being so for some time. Caribbean Cooking can be incorrporated in any cuisine as it have that touch of variety in taste and flare.
