Overview

"Vefa's Kitchen" is the first authoritative and all-encompassing Greek recipe book in English. Doing for Greek cuisine what the hugely successful "Silver Spoon" did for Italian, it contains more than 700 fully updated, straightforward and mouthwatering recipes. Aimed at all lovers of Mediterranean food, the book will appeal to anyone who loves to cook easy, tempting and delicious dishes, from simple but stunning salads and mezedes in summer, to slowly simmered meat dishes and crisp filo pastries in winter. As well as presenting definitive recipes for taverna favourites such as moussaka, tzatziki and hummus, the book documents the extraordinary variety of local sweets and pastries, delicious home-baked breads and cheeses of the mountainous interior, as well as the fish and vegetable dishes of coastal areas, simply fragranced with lemons and herbs. Like Italian cuisine, Greek cooking is incredibly simple and delicious, and is based on the natural qualities of good olive oil, fruit and vegetables, grains and seafood. And more than almost any other cuisine, modern Greek food contains many traces of its remarkable history, with its origins as far back as Homer and the 'wine-dark' Aegean Sea of the Iliad. The health benefits of the traditional Greek diet are well documented, and the extensive Greek repertoire of vegetable dishes is well represented, with more than 300 dishes that do not contain meat or fish. There is a comprehensive introduction on local ingredients and wines, the history of Greek cooking and the culinary characteristics of each region, as well as recipes for traditional and religious dishes. Vefa Alexiadou is the leading culinary authority in Greece today and is theauthor of many bestselling cookbooks. "Vefa's Kitchen" will quickly become a must-have for all home cooks and lovers of Mediterranean food.

Editorial Reviews

Publishers Weekly

Alexiadou, a chef well-regarded in Greece for her books and TV series, has compiled recipes from every corner of the country, for every section of the menu, beginning with a delightful array of mezedes such as wine-steamed mussels and fava bean croquettes, then going through soups and salads, pasta, fish and shellfish, all kinds of meats, and baked goods. Though she certainly includes classics like pastitsio, spanakopita and baklava, Alexiadou's selections overall demonstrate the breadth and depth of Greek cookery with entries such as duckling with kumquats, pumpkin fritters and tangerine flutes. She opens with a brief tour of Greece's main regions and their specialties, but the focus is more on cooking than chatting; a concise section offering historical tidbits and "general instructions" opens each chapter, and many recipes close with serving and presentation tips. Alexiadou's aim is to provide a wide assortment of authentically Greek dishes, bringing the country to life through the recipes' varied ingredients rather than through prose. Some of the ingredients, like colocasia, or sheep's milk, will be harder for the home cook to obtain than others, but anyone seriously interested in learning the full repertoire of Greek cooking will be willing to make the effort, just as they will want this book. Library Journal

Alexiadou is a cooking teacher and the author of 13 other cookbooks that have sold more than five million copies in Greece. Her new book is the third in the Phaidon series, which includes Simone and InA©s Ortega's 1080 Recipes. She presents more than 650 recipes, both classics and regional specialties from all over Greece. It's too bad that few of the recipes have headnotes, since more background would have been helpful. Nevertheless, interested cooks will want.

    Vefa's Kitchen

My fist greek cook book was one of Vefa's and I am a big fan. I grew up in a home with a greek grandmother (Yaya) and she was an incredible cook. Vefa's recipes reflect that same old world cooking with recipes from all regions of greece, beautiful illustrations compliment the dishes. I highly recommend this book.

    What book?

I would love to be able to review this book, which I was very excited about, but have not yet received it since ordering it in early April! And there seems to be no end in sight since there is still no delivery date.

This is the "Julie Child" of Greek cooking!

This is a fabulous cookbook, whether or not you're looking specifically for Greek recipes. I can't imagine the research that went into writing this book. It's fabulous! I bought one for my new daughter-in-law who was honeymooning in Greece, then loved it so much I went back to get another for myself! Congratulations to the author on a wonderful accomplishment!

    Vefa's Kitchen

After waiting since May for the book and no satisfaction from Barne's & Noble, I contacted the publisher who responded quickly that the book won't be out again till October and thanked me for my patience.

also wondering when i will receive this book...

I also was very excited about this book and ordered in May. A month later I was told it was out of stock. I have contacted customer service about this and all they can tell me is to keep waiting. I'm unsure if they'll ever get more in stock since it is out of print at many other places. I wish I had known this when ordering...

    Wondering Where My Books Are

I join the previous two reviews in being very excited about ordering two copies of this book, highly recommended by a friend. I ordered them early in March; one for myself, the second as a birthday gift for my daughter's birthday on April 20th. I e-mailed customer service and they told me my books were expected to ship on June 8th. It is June 21st and still no word. An updated expected date of shipment would be greatly appreciated.

    Indeed --- What Book?

Ordered April 13 - expected shipping changed to May 26...
I don't want to cancel my order, I want to receive the book. BN: when can I expect to receive it (it was supposed to be a Mothers-Day gift)?

    Now I can cook like a "Yia-yia!"

Amazing how these simple recipes can recreate my favorite memories of Sunday dinners at friends' homes and tavernas in Cyprus and elsewhere around the Mediterranean! The books is enormous, but it really has everything, broken down in ways that easily allow for successful improvisation. I've had far better success with this than any other Greek cookbook, and only Claudia Roden can compare in capturing the essence of the Mediterranean in an American kitchen. The photographs are lovely, but I do wish the type were a little darker. I also like that "Vefa's" includes so much regional cuisine, including the Mediterranean island of Cyprus.

    Wonderful cookbook.

I have been searching for a comprehensive Greek cookbook. Here it is. Easy to use, not a lot of ingredients that are difficult to find - though octopus is not available at my fish monger or supermarket - thoroughly explains procedures. Really a user friendly cookbook. You may develop muscles lifting it.
