Caution: I literally ruined my very costly stand mixer trying to make the marshmallows in this book. The recipe, tried three times, failed in addition. My recommendation-don't even attempt the recipe. Several other recipes are mediocre at best, often requiring expensive and/or elusive ingredients. Recipes are long with an over-reliance on one product-MimicCreme. A couple of good ideas though.
