Bacardi Cocktail-If you fail to make this classic with genuine Bacardi rum, somebody turn out the lights and call the law-you've just violated a statute. In 1936, Bacardi became so irked with the bars' propensity for using no-name rum in this cocktail that the company took the matter to court. Bacardi won, the defendants appealed, and the State of New York upheld in the company's favor. Thus was the authentic Bacardi cocktail preserved for future generations.

1 1/2 oz. Bacardi rum
Juice of 1 lime, strained of seeds
1 tsp. Grenadine
Maraschino cherry garnish

Place rum, lime juice, and grenadine in a cocktail shaker with cracked ice. Shake rapidly and strain into a cocktail glass. Thread the cherry on a toothpick or cocktail sword and lay across the rim of the glass.

For your further drinking pleasure: In the classic guide to drinking, The Gentleman's Companion, Charles Baker describes the Bertila, "an exotic We Have Personally Fetched Back from Taxco...where Artists from America Congregate for Varying Reasons, & with Varying Success." To make the drink, double the quantity of run, add the juice of half an orange, combine with limejuice and grenadine, and shake with finely cracked ice. Serve unstrained in a champagne flute, omitting the garnish.
