Spinach and Cheese Quiche
If you'd prefer to use fresh spinach, you'll need about 8 cups of washed trimmed spinach leaves. Cook them in a large saucepan with only the water that clings to them, stirring as needed, until wilted, about 2 minutes. Drain well and finely chop.
Makes 12 servings
One 12-ounce can evaporated skimmed milk
1/3 cup low-fat cottage cheese
¼ cup grated Parmesan cheese
3 egg whites
½ teaspoon salt
¼ teaspoon black pepper
One 10-ounce box frozen chopped spinach, thawed and squeezed dry
Plain Pie Crust, baked and cooled
1. Preheat the oven to 425° F. In a medium bowl, whisk the milk, cottage cheese, Parmesan, eggs, egg whites, salt and pepper.
2. Place the pie plate on a jelly-roll pan; spread the spinach over the pie crust, then pour the filling over the spinach. Bake 15 minutes; reduce the oven temperature to 350° F and bake until the filling is set, 20 minutes longer. Let cool 10 minutes before serving.

As a 1600-calorie dieter, I have to crunch all the numbers to make sure I stay on track. Even though it's not a Weight Watchers plan, it gives all the nutritional information I need. Total A+ book.
I bought this book when it was first published and I have lost 50 lbs with it. Unfortunately, my dog found the book tasty and chewed it up, but I am definitely replacing it. I thought the points section helpful but not inclusive enough. Also, Weight Watchers could have included activity points information.
Positive aspect. Each recipe contained the points - very nice. The style of the cookbook is easy for retrieval. Some good recipes found. Not so good.. I would have enjoyed seeing more vegetable recipes in the book. There were not a lot of easy to fix - quick selections.
My husband & I love this book! We have lost five pounds in one week & the recipes in this book are down right delicious!
A lot of good recipes. Rely on this book often for day-to-day meals. It's great for sticking to the program.
There were a fair number of steps, but the soup was really good. And the number of points was 'worth it'.
