Chipper Banana Muffins

Makes 18 Servings

Marsha likes to bake a batch of muffins on the weekend and freeze them for the hectic weekday morning.

2 ¼ cups all-purpose flour

1 ½ teaspoons double-acting baking powder

1 ½ teaspoons baking soda

½ cup sugar

½ cup unsweetened applesauce

2 eggs

1/3 cup canola oil

2 very ripe bananas, mashed

½ cup skim buttermilk

¼ cup semisweet chocolate chips

1. Preheat the oven to 350° F. Line eighteen 2 ¾" muffin cups with paper liners.

2. In a medium bowl, combine the flour, baking powder and baking soda.

3. In a large bowl, with an electric mixer at medium speed, beat the sugar, applesauce, eggs and oil until frothy. With the mixture at low speed, alternately add the bananas and buttermilk with the flour mixture; stire until just combined (do not overmix). Fold in the chocolate chips.

4. Spoon the batter into the cups, filling each about two-thirds full. Bake until golden and a toothpick inserted in the center comes out clean, 20-25 minutes. Remove from the cups and cool completely on a rack.

Per serving: 150 calories, 5 g Total Fat, 1 g Saturated Fat, 24 mg Cholesterol, 161 mg Sodium, 23 g Total Carbohydrate, 1 g Dietary Fiber, 3 g Protein, 38 mg Calcium.

Most recipes I try from cook books are bland and do not turn out very well. (I am not really a cook) EVERY recipe I have tried out of this book is fantastic and simple. I was VERY pleasantly surprised, even my husband has enjoyed the recipes from this book. If you're concerned about trying another cook book, especially a 'diet' cook book, don't worry about this one, we highly recommend it!

This is one the older WW books I have, but I do look at it often when I am looking for side dishes and larger entrees. Some of the recipes are a bit more time consuming, but great for weekend cooking.

I have a lot of Weight Watchers cookbooks, and this has to be the best, by far. Every recipe is a winner, and there are so many to choose from, I rarely make the same recipe twice. My husband has become a real fan of the Weight Watchers recipes as well, and has rated them all as 'keepers'. The recipes are easy, with delicious ingredients...they've even gotten me to eat more vegetables than I have eaten in my entire life. Recipes like these have helped me lose 70 lbs. so far. I highly recommend this book.

Wonderful...easy to follow, With pantry staples. Every recipe I've cooked has been great! Check out the chocolate cheese cake...that's mine.

This book has given my family a quest to continue seeking low-fat recipes that we like. We rate each recipe (1-5)as we try them and most of them are a 4 or 5. We wanted something that would give us quick family meals that don't taste low in fat. We are ready for book 2.

I ordered this book after accidently destroing the other with chicken broth! I serched and found it. I had use the other book for many years and the recipes are staples of ours. I do not eat red meat and there are a number of very interesting and tasty dishes from which to choose. The recipes use common ingredients and are easy to prepare. Bob and I watch our weight, exercise and have an active life. I have used the recipes when we have guests and they enjoy them also. I don't think you will be disappointed.
