Thomas A. Bloom, Ph.D., was a professor of food science and food management, as well as president and CEO of the California Culinary Academy and vice president of the Culinary Institute of America. He wrote the award winning television cooking show and cookbook Cooking at the Academy, He is a freelance writer, lecturer, and food consultant.

Robin and Thomas have three children and live in San Diego

Sweet Potato and Chicken Dinner

Makes 1 to 2 servings

1 sweet potato, scrubbed
1/4 cup bite-size pieces cooked white chicken meat
1 ripe apricot, peeled and pitted
1/2 cup cooked brown rice
1/2 cup formula or other liquid

Puncture the skin of the sweet potato with a fork or knife and microwave on High until soft, about 8 minutes. For conventional ovens, bake in a preheated 400ºF. oven for 45 minutes.

When cool enough to handle, scoop out the meat of the sweet potato into a foodprocessor, food mill, or blender. Add the chicken, apricot, brown rice, and 1/4 cup ofthe formula. Blend until smooth. Add more formula until you achieve the desiredconsistency. Store leftovers in the refrigerator for no more than 2 days.

Recommended for ages 8 months+


Tofu Custard

Makes 4 Servings

3 large eggs
1 cup firm tofu
2 tablespoons rice malt sweetener (located in the specialty food section of grocery)
1 cup milk
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon

Preheat the oven to 350ºF. Lightly butter a 1 1/2-quart casserole dish.

Beat the eggs in a medium-size bowl.

In a blender or food processor, process the tofu, sweetener, milk, vanilla, and cinnamon together until they're smooth. Pour the blended mixture into the bowl with the beaten eggs and stir, mixing well.

Pour the custard mixture into the buttered casserole dish. Bake for 1 hour, until the top is light brown, or, when a knife is inserted in the middle, it comes out clean. Let cool and serve at room temperature.
