Organic chef Watson extols the virtues of living healthfully by combining natural ingredients and thrifty meal planning.

"Eating green doesn't have to mean eating up all your money," writes the author. Watson and husband Bruce (both "flexitarians" who eat meat socially) took part in a fascinating experiment during which spending $1 per meal for an entire summer forced them to radically rework weekly menus, intricately budget food purchases and cook from scratch. The first half of the book shares the fruits of that trial period: a "scrimp or splurge" chart listing money-saving alternatives for common kitchen staples, indispensable tips on shopping smarter (watch for sales to get national brands at store-brand prices, scan the Hispanic aisle for equivalents), and the benefits of fresh-freezing, farmers' markets buying in bulk and composting. Some suggestions are a stretch, like using food scales and buying smaller plates to reduce overeating. Watson's 7-day, 20-minute cooking plans fall right in step with her smart planning, cooking and shopping strategies. The author organizes menus organized by season: Southern Summer Pesto on high-protein pasta and green beans with Blueberry Pie yields to Harvest Lasagna and Baked Pears with Cinnamon Yogurt Sauce in autumn. The second half of the book, which is disappointingly devoid of photographs, features breakfast offerings like low-salt Better Blueberry Pancakes, Magic Quiche with Asparagus and homemade "Whisk" breads and tortillas. Dinner recipes are curiously sparse, but those seeking a more healthful approach to cooking will appreciate Watson's family, community and planet-friendly organic lifestyle.

Meet the Author

Linda Watson, the founder of CookforGood.com, created her wildly affordable cooking plans after being inspired by a national challenge to eat on a food-stamp budget. She credits her background in project management helping her to not just survive but thrive on just a dollar a meal per person. Her 2013 SNAPcut Challenge used WAO recipes to cook organic and local even on the newly reduced food-stamp budget. Linda has a certificate in Plant-Based Nutrition from eCornell and the T. Colin Campbell Foundation. She's had a wildly varied career so far, including developing a top-secret expert system, working with Tom Clancy and Douglas Adams on computer games, and riding the dot-com wave with eGarden.com. Today she teaches cooking through classes, books, and videos. Watson lives in Raleigh, North Carolina, with her husband.

    Best Plan Ever for organizing your kitchen, sticking to a budget, and being ECO friendly

    I always wanted to eat healthy, but thought that some things were not possible because of cost. Then there was my husband who was pretty demanding about every meal being almost restaurant worthy (variety included). I would try to plan, but things always got in the way, like busy schedules, tiredness, and boredom of repeating certain recipes.

    This book takes all the planning off my shoulders. I just follow the menus it as listed each week, and that's what we eat, no guessing, no wondering. And ALL recipes are from scratch! I make my own bread, yogurt, pizza, chocolate pudding (to die for!) and I know that I'm putting healthy things in my body and being kind to the environment. This is the cook book that combines all the things we look for: healthy organic meals, convenience, with a pretty slim budget in mind.

    I wrote to Linda on her website saying that I was so excited about having an empty fridge. I know that sounds weird, but it's so satisfying knowing that I've planned my meals and we are eating all the food and not wasting anything!

    Great for "natural cooking" with good money tips

    This is the 1st cookbooks I actually read through. It has great tips for purchasing as well as making the food. Love it. Will give it as a gift. I especiially like making my own bread without a bread maker.

    Excellent Resource

    I bought this book for the variety of vegan friendly recipes, the menu plans by season, and for the authors helpful tips throughout the book. It's a great cookbook and resource guide.
