Known as "War Cake" by the author's mother, the recipe was developed during WWI. This cake has no eggs, no milk, and originally no butter when it was in short supply. Butter has been substituted for the margarine that was in the original recipe.

"War Cake"

Yield: 1 cake
Prep Time: 1 hour

1 cup brown sugar
1-1/4 cups water
1 cup raisins
1/3 cup butter
1 teaspoon ground nutmeg
1 teaspoon cinnamon
1/2 teaspoon sea salt
2 cups flour
5 teaspoons baking powder

Boil sugar, water, raisins, butter, salt and spices together in a saucepan over medium-high heat for 3 minutes; cool. Sift together flour and baking powder and add to boiled mixture. Mix well; bake in loaf pan at 350 degrees for about 45 minutes.
