About the Author

As the 2013 winner of NBC’s Next Local TV Chef, Philadelphia chef Laura Hahn has been sharing her easy-to-replicate recipes from around the world but doing it all gluten free. Shortly before entering the competition, she was diagnosed with gluten intolerance that forced her to adjust her recipes significantly. Her life-altering condition spurred a new mission to educate people about a gluten-free lifestyle that is easily adaptable. In this book, Laura brings flavors, colors, and cultures to the comfort of your own kitchen. Laura’s dietary troubles began two years before the NBC competition, when she became very sick while on a deployment to Iraq with the American Red Cross. She was advised to stick to bland foods, which included a consistent dose of bread, pasta, and crackers. As time went on, her illness became increasingly worse. Once she returned to the United States, she was anemic and had lost a great deal of weight. After a battery of tests, doctors could not explain her condition. At one point, she was forced to obtain daily iron transfusions. In search of an explanation, she found an article about gluten intolerance and celiac disease. The list of symptoms that were in the article mirrored her experiences. Up to that point, her symptoms seemed random, disconnected, and seemingly inexplicable. She began an adjustment in diet and started recreating all her favorite recipes without wheat and gluten. During each round of the NBC competition, Laura adapted the cooking that she learned from her years of international travel. She ultimately won the competition, which opened doors to a career in the culinary industry and gained her a worldwide following through her blog (and moniker) Guilt Free Foodie Cutie. Gluten intolerance has become the number one undiagnosed illness in the United States. “My mission is to share my story and connect the gluten-free world to all the resources I am able to find,” says Laura. Simultaneously, she is engaged in an outreach concerning gluten intolerance and celiac disease, hoping to spread awareness about this condition, which is often misunderstood. As she says, “Informing the public about gluten intolerance is critical. First step, they need to know that this is more than just preparing a meal without bread.”
